5 Best Fusion DishesπŸ‘¨‍🍳 in Delhi

“To eat is a necessity, but to eat intelligently is an art.” - La Rochefoucauld

Cooking is an eternally evolving art since ever. The recent trend in food is Fusion Cuisine where local meets global & become Glocal. The best of two cuisines are fused to create even more amazing dishes. The Indian cuisine is also enriching through the culinary experiments being undertaken by the chefs. I have always been a food enthusiast. I love to cook, eat &blog on food. In quest for the best fusion cuisine, I rambled into every Delhi eatery known for experimenting with food. Few of the gems which I discovered are these:

  • Apple Jalebi @ Cafe Lota
  • Cafe Lota is an amazing place to be at. The place gives cool traditional vibes in mid of the hustling metropolitan. The name “Apple Jalebi” sounded musical to my ears. I ordered Apple Jalebi with so much of hopes. The apple slices were coated in Jalebi batter and fried to the perfection. The Jalebis were dusted with Cinnamon powder and served with Coconut Rabri. If you have a sweet tooth, this dish is highly recommended.

  • Zoodles @ Blue Tokai

The moment I read 'Zoodles' in the menu, I grew curious. Got to know that Zoodles are noodles made of 'Zucchini'. I understood I have to order this. The zoodles steamed to tenderness, were nicely seasoned and served with veggie pops and fresh greens. It felt so refreshing & light. The ambiance of the cafe is also too cool.

This Dal Makhni is epic. Tamasha is known for its Modern Indian cuisine. They have infused Jack Daniels in Dal Makhni & the result is not less than great. The Dal is served flambe (i.e. a fire is lit while serving the Dal). The Dal is thick & rich with unique hint of Jack Daniels whiskey. The soft butter naan goes well with the dal.

Punjabi by Nature (or PBN) serves very palatable fusion cuisine. I decided to try Naanza which is basically a pizza on punjabi 'Naan' base. Being a cheese-maniac I am, I ordered the one with most number of cheeses – Ricotta, Cheddar & Mozarella one. The Naanza came much better than my expectations. The Naan was chewy and soft. The naanza was so cheesy that it vanished within minutes.

Last but certainly not the least. Honestly, the Paneer Tikka Bagel was calling me right from the menu to have it. Bagels are my favorite & Paneer Tikka is even more favorite. Bagels are breads similar in shae to donut but harder on the crust. The bagel was rightly baked and topped with sesame seeds. Delicious & smooth paneer tikka put with the fresh crispy lettuce & peppers gave amazing contrasting texture to the sandwich.
